We are trying to eat more turkey around here. Full of protein - not just for Thanksgiving anymore. So I decided I wanted to make turkey Parmesan sans the pasta of course. And I found this great recipe. It tasted delicious and was quick - another favorite of mine especially with trying to go to the gym during the week.
4 turkey cutlets (4 oz each) flattened *the package I bought had two large ones which I cut in half*
1/8 teaspoon salt
1/8 teaspoon pepper
1 1/2 cups marinara sauce
1/2 cup shredded mozzarella cheese
2 tablespoons grated Parmesan cheese *or substitute cougar gold if you're out! YUM!*
2 cups cooked whole wheat pasts (optional)
Coat a large nonstick skillet with cooking spray. Place over medium heat. Add cutlets; cook until golden brown on bottom. Turn cutlets over and season with salt and pepper. Heat until cooked through, about 3 minutes.
Reduce heat to low. Add marinara sauce. Sprinkle cheese over cutlets, simmer, covered until cheeses are melted. Serve with pasta.
